Why seasonality matters when you buy for a business

When a product is at peak harvest there is more supply in the market: you get better quality, more uniform sizing and, in general, better pricing. Out of season the opposite happens: less volume, uneven quality and prices that move from one week to the next.

For a restaurant, hotel or café that translates into something very concrete: recipe cost changes with the calendar. Buying with the season on your side protects margin; buying against it demands planning ahead or having a substitute ready.

Dry season and rainy season: what changes in the field

Panama does not have four seasons: it has a dry season and a rainy one, and that alternation sets the rhythm of the countryside. Broadly speaking, the dry season concentrates the harvest of several local fruits, while in the rainy season handling gets harder: more humidity means more delicate leaves, more pressure on quality and more demanding transport.

Seasonality also varies by region. Highlands are not lowlands, and one watershed is not the other: the same product can be coming in from one area while it winds down in another. And from one year to the next, rainfall and planting shift the calendar. That is why we do not publish fixed dates per product: they would be a promise the field does not always keep.

General patterns that do serve as a guide

There are widely known patterns that help with planning, always understood as orientation rather than a calendar:

  • Local mango is abundant toward the end of the dry season and the weeks that follow.
  • Local citrus — orange, mandarin, key lime — has marked seasonal peaks; Persian lime tends to have a steadier supply through the year.
  • Leafy greens and herbs (lettuces, culantro, cilantro, spinach) suffer in very rainy weeks: quality and price move more than in other groups.
  • Roots and tubers such as yam, otoe and cassava tolerate storage better, so their supply tends to be more stable than that of a delicate fruit.
  • Passion fruit tends to produce in waves, not evenly throughout the year.

How to plan your menu with the season on your side

The strategy that works best in professional kitchens is splitting the menu in two. The stable part — potato, onion, carrot, cabbage, plantain — can be locked in without a problem. The seasonal part is managed with flexibility: a “fruit of the day” on the buffet, a seasonal juice on the menu or a side that rotates with whatever the field is producing.

When a fruit runs short, there are alternatives that keep the recipe going without depending on peak harvest: imported product, IQF frozen fruit or pulps such as passion fruit, mango or soursop, which keep the flavor available all year round.
